After falling in love with Fannie's Killer Fried Egg Sandwich from M. Henry earlier this year (while visiting Chicago), Andrew and I finally decided to recreate it at home.
Isn't it perfect?
I swear, I could just stare at that sandwich.
All. Day. Long.
Kelly's M. Henry's Fannie's Killer Fried Egg Sandwich
2 slices of toasted sour French bread
2 eggs
2 slices of center cut bacon (they use applewood)
1 plum tomato
gorgonzola
thyme
Prepare the eggs over medium and layer all ingredients on bread. Season with salt and pepper to taste.

Oh...I love anything with gorgonzola! I would never have thought to put that in an egg sandwich.
ok, not going to lie. I think I would need the eggs done WELL and then that sandwich would be perfection! ;)

We make a variation of that on Sunday nights sometimes.. not sure why Sundays ... I toast french bread.. use Gouda cheese and sometimes smoked cheese ( we don't eat bacon) and then fried eggs.
I will add the sliced tomatoes.. not sure why we never did that before.
There is something so satisfying and homey about fried egg sandwiches.
I also like fried/poached eggs on my salads.. good thing I don't have high cholesterol or something :)

that looks so good! i would never think to use gorgonzola.
I do a version of this with ham and brie, only the eggs are just a little more done. I love vine ripened tomatoes on anything. We have even done this with pesto, tomatoes and scrambled eggs, no cheese. It's all good.
