Anyway, with that kind of history, it should come as no surprise that I looove Jewish comfort food. Allison's mother made me her kugel when I visited a few weeks ago, and it's all my pregnant self has been craving ever since. So. I finally got my act together after looking up eight hundred and forty six different recipes online and experimented to find an acceptable version of my own.
It's not as tasty as hers, but I think it comes reasonably close.
Kugel
1/2 pound No Yolks Noodles
1/2 cup Smart Balance 50/50 Butter Blend, melted
1 pound Breakstone's Lowfat Cottage Cheese
2 cups fat free sour cream
1/8 cup sugar
1/8 cup Truvia
6 eggs
1/2 teaspoon ground cinnamon
1 tablespoon sea salt
Preheat oven to 375 degrees.
Boil the noodles in salted water for seven minutes. Strain. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased 9 x 13 inch baking dish.
Bake until custard is set and top is golden brown, about thirty five minutes. Remove from oven and sprinkle with sea salt.

The photo is really breathtaking .. it has been so long since I have seen that sort of sight ( whimper) ..
And it has been way too long since I have had Kugel or anything like that .. I am far away from my favorite delis and ethnic shops .. Zabars !! just a little smoked salmon and cream cheese on a real bagel would make me smile for a long time ..
Maybe .. someday ... soon-ish.
Pat the belly and tell Aston the recipe, get him all psyched about eating kugel and those big kosher pickles .

I don't crave anything but ice cream, so I think you're doing better than me! Looks yummy.
It would probably be tastier and better for you if you used real sugar and fullfat products.
That said, I do love a good kugel

c, those big kosher pickles are THE. BEST. i went through jar after jar the first two trimesters, but now they don't agree with me. same thing with bagels and lox (which i desperately miss!)... did you ever go to pomperdale's in fort lauderdale? i lived close to it for years. my faaav jewish deli.
I love Kugel, my grandmother used to make the yes stuff ever!
Since then, have not had, until my mother in law (who is Ukranian not Jewish) made some as a treat for me this past Hanukkah... and what a treat it was! mmm...
